Preparation: Preheat the oven to 170 degrees C. Wash the potato and dry it thoroughly. Place the potato on a baking sheet. Then, prick the potato and using a metal skewer, run through the potato. Bake it for 1 and half hour. Once it is baked slice it in half lengthwise and from each half of the potato, take out the flesh into a bowl. Reserve the skin.

Add butter and crab into the potato. Season it with the ground pepper and salt. In a separate bowl, mix mayonnaise with the lumpfish roe. Into the back of the potato skins, put the crab and potato mixture. Then top it up with lumpfish roe and mayonnaise. Garnish with chervil. Serve the dish immediately.

Ingredients required are:

Pasta - 50 gramsChopped, smoked salmon - 150 gramsSour cream - 150 milliliterChives - 1 spoonLumpfish roe - 50 gramsSalt and fresh ground pepper for seasoning

Preparation: Cook and then drain the pasta. Toss it with cream, smoked salmon along with chives. Serve it in soup bowls, topped with 1 spoon of lumpfish roe. Season it with pepper and salt. Serve this dish immediately.

Recipe 3

Ingredients required are:

Eggs - 2Olive oil - 60 milliliterPlain yogurt - 125 milliliterMilk - 125 milliliterGrated lemon zest - 1 spoonSelf-rising flour - 375 gramsSugar - 1 teaspoonCreme fraiche - 250 gramsSmoked trout - 1 smallLumpfish caviar - for serving

Preparation: First preheat the oven to 180 degrees C. Then grease mini-muffin pans. In a bowl, combine the oil, eggs, milk, yogurt and lime zest. Into a large bowl, stir in sugar and flour. Pour in the wet ingredients and combine well. Spoon this mixture into the muffin pans. Bake for 12 minutes or till it is cooked. Keep aside to cool it completely. Cut off a small slice from the top of all the muffins, scoop out little from the middle part and discard it. Fill it with little trout, creme fraiche and some lumpfish caviar. The guest will love this preparation.

Southern-Style Green Beans – Slow Beans for Fast Times

One of the sadder side effects of the American culinary renaissance we’ve enjoyed over the last thirty or forty years, has been the chronic under-cooking of green vegetables. Sure, there was a time when we cooked everything too long, but now, if it’s not bright green and still crispy, it’s considered ruined.

That’s why every once and a while you have to enjoy something like these slow-cooked, southern-style green beans. These beans are cooked forever in a bacon-spiked, aromatic broth, and when they’re finally done, you’re almost shocked at how good they are. It seems so wrong, yet tastes so right.

I think two hours is perfect, but if your beans are fatter/thinner, you’ll have to adjust the time. What you’re looking for is something that literally melts in your mouth. Office catering can bring in steady income but only if it's done right. It's a high stress job that requires organization and good execution as clients rely on the caterer for meals. Slip ups can leave them hungry and irritated and cost you future contracts.

As for clients, make sure you go with a caterer you know has a good reputation. If it's daily lunch catering for employees, go for wholesome home-cooked style menus. If it's clients you need to impress, a touch of gourmet is a good idea. Just be sure to find out who suffers from what allergies or is on a diet plan.

Get real about the budget

This applies to both clients and caterers. We've just come out of a recession and the going is slow but not so slow that commodities are too cheap. Clients should have a realistic view of what their budgets can buy. Caterers should too.

Cutting corners is fine as long as nobody expects gourmet cuisine at $20 a head. Menus should be simple and not consist of 7-course meals unless it's a fancy event. If a 7-course meal is being planned, the cost can be tempered by selecting decent quality fare and not exotic foods.

Give the guest list some leeway

If the catering is for 20 guests, caterers should expect another five guests. Clients who decide to invite more people after giving the list to caterers should inform them at the earliest. Doing so a day or two before the event can be disastrous as plans will go awry. Clients are also likely to pay an additional fee which will dent the budget.

Don't interfere

This is for clients eager to make the event a success that they unintentionally interfere with the catering work. Caterers understand you have qualms but they're experienced at handling different events. Leave them to their jobs and enjoy the occasion rather than fretting with the service. Caterers will also appreciate your trust and do their best to serve up a memorable event.


Hire way in advance

If a caterer is hired only three-four days prior to an event, you can't expect excellent service. There's a lot of work involved like planning, shopping, preparation etc. Small parties of 10 to 15 people require at least five days notice while large parties have to be planned a week to 10 days in advance. The more time is given for organization, the better the event will proceed without a hitch.

A perfect menu

Menu selection depends on the client and you may choose any group of items. But some foods are a bad choice because they don't sit well, dry out or become soggy. Unless they're prepared on-site, exclude them.

A perfect menu consists of soup which can't be overcooked or dried out, chicken which heats well and doesn't become soggy and braised meats and vegetables as they retain heat and water. Chilli also holds well as it doesn't lose taste and texture.

If certain items can't be excluded, caterers will have to do the following: Cook fried foods and rice on-site, chilled slightly undercooked grilled items during transport and complete the cooking on-site, and prepare fried oysters or crab cakes if seafood is demanded as fish is easily overcooked and dries out when held for too long.

Curry Tomato Soup + Zucchini Noodles


Growing up I was a Campbell's tomato soup girl, thanks to my mom who introduced me to this soup while pairing it with spaghetti noodles. For a teenager it was easy, fast, filling and I just plain loved it! Sometimes I would add milk making it a creamy version but most of the time I just simply added water. Now that I'm a little more grown up, I decided to take my old favorite and give it a much deserved homemade redo with a grown up flair. My inspiration comes from this recipe at 101 Cookbooks and also the recipe from Love & Lemons (I liked the zucchin noodles in place of pasta...how perfect for this redo!)


For this soup you can either use fresh or canned tomatoes (preferably fire roasted if using canned). Add to that some sweet onion, curry, basil, a bit of salt, red pepper flakes, lime and some coconut milk/cream and you have yourself a very wonderful tomato soup that pairs well with zucchini noodles, or any noodle of your choice! You can also use farro, rice or some other grain instead of noodles like Heidi suggests in her recipe at 101 Cookbooks



Simple, flavorful and good to the very last bite, or sip if you will. Once the zucchini noodles are gone you will be tilting the bowl to finish! I do recommend using a non rimmed bowl for this soup unless you want to finish with a spoon.


Curry Tomato Soup + Zucchini Noodles

Ingredients (serves four)
  • 4 small/medium zucchini
  • 1 large sweet onion, thinly sliced
  • 1 tablespoon coconut oil or olive oil
  • 3 cups tomatoes (about 5 large), diced or 1 can (28oz) tomatoes + juices (pref. fired roasted)
  • 2 cups water or vegetable broth
  • 1 tablespoon curry (red curry paste or yellow curry powder)
  • 1/4 teaspoon cumin, or to taste
  • 1/4 cup fresh basil, loosly packed
  • 1/2 teaspoon red pepper flakes, or to taste
  • salt to taste
  • 1 can (14oz) coconut milk or cream or 1 cup unsweetened almond milk
  • limes, to serve

In a large pot, heat oil on medium, add onions and saute for five minutes, or until softened. Add tomatoes, water, curry, basil, red pepper flakes and salt, turn heat to medium high, bring to boil, reduce heat, cover and simmer for 15 minutes. If you want a creamy soup, add the coconut milk/cream after 10 minutes of simmering, continue to simmer for five more minutes. Or you can do as I did and add a few spoonfuls to your serving bowl. Once done, taste for flavor adding extra spices as needed. 

Once soup is done, remove from heat, let cool a few minutes and puree using a submersion blender or food processor (if using a food processor you may have to puree in a couple batches). 

While soup is cooking or cooling, julienne or spiralize your zucchini. No need to cook as these will be served raw and warm a bit once the soup is served over top. 

Serve with lime wedges, fresh basil and/or oregano and coconut milk/cream. 

Notes: 

Replace the coconut milk/cream with one cup unsweetened almond milk if your watching your fat intake, or use lite coconut milk instead of full fat. I tried with the almond milk and loved it but the coconut milk is my personal favorite.

Also, try using soba noodles, brown rice, farro, quinoa or rice noodles in place of the zucchini noodles for something different.

For the julienne tool, I use one like this. It will create the noodles you see below and store nicely in your utensil drawer.

Gluten-Free Peach Cobbler

Warm from the oven. My gluten-free peach cobbler recipe.

Is Mercury in retrograde? And if so, Darling, do I believe it can wreak havoc with recipes? I started out with a different approach to this peach cobbler recipe, you see. I thought I'd try out the new Betty Crocker Gluten-Free Bisquick mix I bought this week. I imagined a golden topped biscuity crust you could sink your teeth into, a melt-in-your-mouth forkful of shortcake, dripping with warm and sticky-sweet juice.

But what I got was a bone white mound of anemic dough (scarily reminiscent of Play Dough) baked into what can only be described as yesterday's mashed potatoes. It didn't even try to turn golden. And it didn't melt in your mouth like a biscuit. It just sat there on your tongue. Flavorless. Bored. Expecting to be admired without effort. Like those fame junkies who are famous for simply being famous. They haven't actually accomplished anything to garner their celebrity status. They just nurture a deeper narcissistic ambition than your average high school beauty queen. They expect adulation because they exist.

Like an awful lot of the gluten-free foods churned out by corporate entities.

They expect we'll fall to our knees with gratitude just because it sports two little words on its label. As if the virtue of being gluten-free is enough. Enough to get us to shell out almost seven hard earned dollars for two and a half cups of cheap refined starch and the privilege of convenience.

And don't get me wrong. I get the allure. I do.

I mean, you're standing there in the supermarket. It's late. You're hungry. And it's right there in front of you. Right next to the 40 acres of shiny wheat laden stuff you can't have. Ever. And those magic words: Gluten-Free! They sparkle. Someone up there in the land of corporate giants has heard of us! They validate you and your odd little disease.

We exist!

And hence, we may consume.

They are recognizing us now, Sweetpea, because we constitute a billion dollar windfall. The food industry has awakened to the perky reality TV version of celiac disease. And sure, I know. The argument is, It's all good. Any awareness is positive (even though the gluten-free diet may be in danger of losing street cred because of its faddish status with actresses who subscribe to its hyped promise of weight loss).

Can the drive for GF profit lead to better eating, though?

I'm not so sure. If the tepid taste of Betty Crocker's Bisquick is any indication, we have not come a long way, baby. Big companies use the cheapest ingredients they can to conjure stuff for the growing gluten-free demand. That means there's an awful lot of "old school gluten-free" going on (based on Bette Hagman's twenty-year old white rice flour and starch blend, perhaps?). G-free mixes and packaged foods use predominately refined white rice flour and inexpensive starches. A glut of empty calories.

Like @AutumnMakes tweeted yesterday, "...funny how it seems the big corps are years behind the everyday gluten-free bakers..."

Indeed. We humble home cooks have discovered the soft, lovely crumb of sorghum and almond flour. Gluten-free cornmeal and buckwheat. Our baking isn't dull or crumbly, dry, or without pizazz. Our flour choices reflect a preference for taste, texture and higher nutrition. And I think we're smarter than the average consumer.

So for now I'm going to continue to eschew the walk down the center food aisles (as Michael Pollan advises). I'll focus on my own gluten-free flour blends and eating whole foods daily.

And in a pinch, when some wild craving hits and I'm too tired to deal with three separate flour bags, I'll use a GF pancake mix (both small family companies who have been in our celiac corner from the beginning).

And I'll create my own cobbler topping, thank you.

Million Dollar Chicken – Of Course It Tastes Rich!

This take on the Standard Grill’s famous “Million Dollar Chicken,” showed me once again that so many of life’s great culinary pleasures happen when you least expect them. I saw this recipe featured on TV recently, and chose to try it for two main reasons: one, it’s slathered in crème fraiche; and two, it’s roasted over caramelized, chicken drippings-soaked bread.

I know, we had you at “slathered in crème fraiche,” but it was the bread that I was really looking forward to when I pulled this out of the oven, which is why I was so bummed when I thought I'd ruined it. Since I got greedy and used an extra slice of bread, and also used a larger roasting pan, the bread cooked to what would generously be referred to as “golden-black.”

Several times during the glazing at the end, I contemplated tossing them out and simply making a joke about it during the narration, but I’m SO glad I didn’t. I can’t explain why, but not only didn’t it taste like burnt toast, it truly tasted fantastic. Hot Wheels Pasta – Your Taste Buds Will Be Rollin on Dubs

It only happens once every couple years or so, but sometimes I’ll think of the name of a recipe before I actually have the recipe. This summery, hot wheels pasta is one such dish. Not sure how “hot wheels” popped into my brain, but pop it did, and the next thing I knew I was at the market buying a box of rotelle.

So the “wheels” part was easy, but what about the “hot?” Just as easy, thanks to an assortment of hot and sweet pepper rings. I used about two-thirds hot peppers to one-third sweet, but you’ll obviously adjust to your personal tolerance. The zucchini provided a nice balance, although this is the kind of pasta that will accept any and all other summer veggies.

Besides what to add, you also have a lot of flexibility when it comes to the final taste and texture. I tend to like my peppers and squash just barely tender for this, but if you cook the sauce a few extra minutes before adding the pasta, you will get a softer, sweeter sauce. My version was a little more bracing, with some bite left to it.

On the other hand, you could cook everything even less, and have what would basically be a hot pasta and vegetable salad. Regardless, no matter what you add, or how long you cook it, I hope you’ll be driven to try this great recipe soon. Enjoy!

2 generous cups dry rotelle pasta
2 zucchini, sliced
2 to 3 cups of sliced pepper rings, seeded
2 tbsp olive oil
