Banana Cherry Garcia Soft Serve

Ingredients
  • 2 frozen bananas, cut into 1 inch chunks
  • 1 1/2 cups cherries, pitted and frozen (divided)
  • splash of unsweetened coconut milk or almond milk
  • scant 1/4 cup dark chocolate chunks (70% +), cacao nibs or raw chocolate chips

Place banana chunks, 1 cup cherries and splash of milk into blender/food processor and blend until just combined. You may need to scrap down the sides a few times or add another splash of milk to help the mixture move. Add in chocolate and remaining 1/2 cup cherries, pulse until just combined. Serve immediately as this is a soft serve ice cream. Top with shaved dark chocolate, cacao nibs or raw chocolate chips. Serves two generously.

Notes: It helps to freeze your serving dish beforehand if possible. Will keep your soft serve chilled a bit longer.

Variations: If you don't want any chocolate chunks try adding 1 heaping teaspoon of raw or dark cocoa powder instead. Adding a teaspoon of vanilla extract never hurts either. It adds another flavor level.

A note on bananas

These are perfectly ripe bananas and just about ready for the freezer. I usually wait until they're a bit more ripened before storing as that is when they are the sweetest and coincidentally have the most health benefits. Using them in their sweetest state means the less added sweetener you will need. So let your bananas ripen well before storing. I freeze mine whole and slice, or break in half, for the recipe if needed but you can just as well cut them into chunks before freezing. Having these on hand you can add them to smoothies, shakes and ice creams. They will stay well in the freezer six to nine months.

Banana Split Protein Smoothie

Ingredients
  • 1 banana (frozen or fresh)
  • 4-5 organic strawberries (frozen or fresh)
  • 1/3 cup pineapple (frozen or fresh)
  • 1 heaping teaspoon cocoa powder
  • 1 teaspoon vanilla extract
  • 1 medjool date or 1 tablespoon maple syrup, optional sweetener
  • 1 scoop protein powder
  • 1 cup unsweetened almond milk or water (or half milk & half water)
  • cherries, to garnish

Place ingredients in blender, except for the cherries, and blend until smooth (if using all fresh fruits, you may want to add 1/2 cup or so of ice cubes along with the water or milk, or use it in place of some of your liquids). Pour into serving glass and enjoy. Makes just over 2 cups. 


A note on the protein powder: Currently I use this Raw Meal from Garden of Life and prefer the Real Raw Original which doesn't contain stevia sweetener and has only a little vanilla. Depending on your protein powder you may adjust the recipe accordingly.

If using chocolate protein powder, you will most likely want to omit the cocoa powder and optional sweetener.

If using vanilla protein powder, you may want to skip the vanilla and optional sweetener. 

You get where I'm going with this. Use your best judgment subtracting anything that your protein powder already has unless you want the extra flavor.

    This rich and creamy, smoked turkey and spring pea fettuccine recipe is inspired by a pasta I learned long ago, working at my first real chef job in San Francisco. 

    You may have heard me mention Ryan’s Café in the past, especially if you’ve tried our famous chicken Marsala, and it was at this same restaurant where I learned what I still consider one of the best pasta recipes ever.

    As I mention in the video, the original was done with smoked chicken, but for whatever reason smoked turkey is much easier to find at the market. I blame the sandwich industry, but no worries, as the turkey is just as good. There’s just something very special about the way the creamy, slightly sweet, aromatic sauce pairs with the smoky meat. Which reminds me, this is also wonderful with leftover ham.

    Regarding what many would consider the dangerously large quantities of cream, I’d like to take a moment to do some math. The recipe makes four appetizer size portions. There’s about 1 3/4 cups of cream used, which is roughly 350 calories worth of butter-fatty goodness per serving. To put that into perspective, those two small ladles of dressing you used during your last trip to the salad bar had about the same amount. So, long story short, relax.

    Anyway, now that I’ve armed you with a comeback for when your (probably too thin) friend questions your copious cream usage, I hope you give this very simple, but extraordinarily delicious pasta recipe a try. Enjoy!


    Ingredients for 4 small or 2 large portions:
    8 oz dry fettuccine noodles, boiled in salted water
    For the sauce:
    1 tbsp olive oil
    1 tbsp minced garlic
    1 tbsp minced shallot
    1 3/4 cup heavy cream (about 34-36% fat)
    6 oz smoked turkey, sliced
    1/2 cup green peas, frozen or fresh shelled
    2 tbsp minced fresh tarragon leaves
    salt, pepper, cayenne to taste
    1 tsp lemon zest

    Memorial Day, Already?

    I can't believe it's almost Memorial Day weekend! Seems like just yesterday I was watching people shoveling snow and scraping ice. Of course, I live in California, and that was on the Weather Channel, but still, seems like yesterday. I blame my beloved Golden State Warriors for making the playoffs, and throwing off my seasonal clock.  

    Anyway, the upcoming long weekend is considered the official start of cookout season, and to celebrate I thought I'd repost this collection of grill-friendly recipes.     Coconut Bacon


    Let's talk about this coconut bacon for a second. It's pretty amazing that you can replicate a baconish flavor and crispness with coconut flakes. I've had my eye on this for quite a while and finally decided to give it a try. I first heard of coconut bacon from Fettle Vegan last year, which has got tons of fanfare since, even making it onto the PPK Top 100 of 2012. Awesome! And just recently I saw this post from Cupcakes and Kale and decided it was time to try this wonder of a creation. I gave these and a few other various recipes a try. All were tasty in their own way but my mission was still not complete. After more searching I finally read about adding smoked paprika from Then Squash and gave it a try. That was my favorite of all. The smoked paprika added a wonderful layer of warmth that I fell in love with. I can eat this stuff by the handfuls. Just to be sure I was not alone in loving this, I shared it with my non-vegan friends and it was a hit. "It's guilt free with all the flavor", one of my friends said. They were asking me to make a batch for them and suggesting I start to sell this stuff. That most likely won't be happening but lucky there is a company already ahead of the curve, you can find out more here: Phoney Baloney's Coconut Bacon. Now you have an option to make it yourself or purchase for convenience. And now I can say my coconut bacon mission is now complete!

    This is a great recipe to have on hand. It's easy and fairly quick, you can be enjoying your coconut bacon in about 40 minutes from start to finish. Then you're ready to make the classic B.L.T. sandwich or wrap. Try adding it on top of soups, salads, tofu scrambles, home fries, pizza. Top it on stuffed or mashed potatoes, roasted veggies like brussels sprouts or other cooked vegetables, beans and/or legumes. And don't forget the sweets, this would be great on these Butterscotch Cupcakes from Post Punk Kitchen or these Maple Bacon Donuts from Phoney Baloney's. There are so many possibilities for its uses and I have no doubt that you will find all kinds of ways to add this quick and tasty tidbit to your meals. 


    Start by measuring out your coconut flakes. I used this organic unsweetened coconut flakes from Edward and Sons. If using this brand, this package happens to be the exact measurements for this recipe. In small bowl combine your flavor mixture.


    In a large bowl, add coconut and drizzle with seasoning tossing well making sure all pieces are well coated. 


    Place on greased cookie sheet/s and bake for 20 -25 minutes, checking after every 5 minutes making sure to stir the mixture well and rotate sheets as needed. Alternately, one cookie sheet or large baking dish is fine too. The trick is to stir during baking. Remove any pieces that are starting to burn too much. I personally don't care for the batches that get too browned as it has a burnt taste. Once you make this a couple times you will be able to tell at what point to remove the bacon by it's coloring for your taste.


    Once golden and caramelized looking, remove from oven and let cool, it will crisp as it cools. 


    Coconut Bacon

    Ingredients
    • 2 tablespoons tamari, bragg's amino's or soy sauce
    • 1 tablespoon liquid smoke 
    • 1 tablespoon pure maple syrup 
    • 1 teaspoon smoked paprika 
    • 3 1/2 cups large flaked coconut (about a 7 oz.)
    • mineral salt for sprinkling, optional
    • coconut oil, for greasing 

    Preheat oven to 325 degrees.

    Mix the first four ingredients in a small bowl making sure to break up any clumps of paprika. In a large bowl add coconut flakes, drizzle the wet mixture over top and gently toss making sure to coat each flake well, about 45 seconds or so.

    Using a slotted spoon, scoop seasoned coconut flakes and place onto a lightly greased, or parchment paper lined, cookie sheet/s. I used two sheets so they could be laid out in a single layer as much as possible but you can also use a single cookie sheet or a large 9 x 13 baking dish and have good results (the key is to stir during baking). Sprinkle coconut flakes lightly with a bit of mineral salt if desired.

    Place in oven and bake for 20-25 minutes. Set the timer for intervals of 5 minutes and stir each time making sure to rearrange all pieces by bringing the center to the outside and the outside to the center for even cooking. You may even like to change the position of the sheets in the oven after the second interval, moving the top sheet to the bottom rack and vice versa. After the first 15 minutes, keep close and keep watch as the coconut bacon can burn very quickly at this point. I really babied my coconut bacon towards the end, it'll be worth your while if you do too!

    Remove when coconut has a nice browned and caramelized color. Let cool, it will get crispy as it cools.

    Once completely cooled you can store leftovers in an air tight container and keep in the pantry for up to a week or two. If it softens a bit, re-crisp in the toaster oven on medium for a few minutes, or under the broiler for a few seconds, keeping an eye that it doesn't burn.

    Notes: Use more or less maple syrup to suit your taste. I like the maple flavor and usually add a heaping tablespoon. Omit it if you don't want any maple flavor at all.

    Keep in mind there are different flavors of liquid smoke...ie, hickory, mesquite, etc., use your favorite. For a more intense smoke flavor, add up to 1 tablespoon more of the liquid smoke of choice.

    Some recipes call for an addition of 1 tablespoon water or oil in the seasoning mixture. I found that I didn't need it and do not call for it in my recipe. Use your discretion as to whether you want/need to add this ingredient. Oil is used to help coat and bind the seasoning to the coconut flakes. Water is used to ensure there is enough liquids to coat flakes evenly.

    And what's the first thing I made using my coconut bacon?

    It was a B.L.T. + Avocado Wrap. And it was delicious!

    The next day I made a great little salad of red & green oak leaf lettuce, diced fuji apple, peanut dressing and topped with coconut bacon. This was super!

    Baked Goat Cheese “Caprese” – Hot and Not

    No salad will break your heart like the “Caprese.” It always sounds great; creamy mozzarella, fragrant basil, and sweet, juicy, vine-ripened tomatoes…what’s not to love? Well, false advertising for one. With very few exceptions, the tomatoes used on these Caprese salads are not sweet, juicy, ripe tomatoes; they’re the opposite.

    They’re almost always your standard, conventionally produced, picked green and left to redden (not ripen) in the case, tomatoes. They’re mealy, flavorless, and completely undeserving of being paired with ingredients as perfect as mozzarella and basil.

    While I’m invariably disappointed by the execution of this classic salad, I do love the combination of flavors, and by using cherry tomatoes, I thought it would translate perfectly for a baked goat cheese appetizer. Did it ever. When you take into consideration the taste, appearance, and ease of preparation, there’s a real chance this could become your new favorite summer appetizer.

    By the way, as long as you are using high quality, oven safe ramekins, you can also do these on the backyard grill. Place a piece of foil on the grates, set down your ramekins, close the cover, and cook until the juices are bubbling, and the cheese is heated through.

    Ingredients for 4 portions:
    8 oz log fresh goat cheese, cut into 4 equal pieces
    2 tbsp olive oil
    2 tbsp basil chiffonade

    Gluten-Free Whole Grain Strawberry Muffins - Berry Goodness

    Gluten-free Goddess Whole Grain Strawberry Muffins
    Gluten-free low sugar whole grain strawberry muffins.

    With all the recent news about sugar, I've been thinking about muffins. And not just any ordinary, ho-hum, run-of-the-mill, starchy, gluten-free muffins. Nope. A tender, whole grain, lower sugar, vanilla scented muffin that bursts with fresh strawberry flavor. Warm from the oven, these pleasantly grainy breakfast treats are pull-apart soft with juicy bites of strawberry. Sweet- but not too sweet.

    I used pure maple syrup for the primary sweetener, and a mere two tablespoons of organic brown sugar. And now for the interesting part. I also experimented with no xanthan gum. This is highly unusual for me. I've usually rely on xanthan gum to give my gluten-free batter and dough the stretchability factor- a trait removed when I booted gluten from my kitchen and wished it vaya con dios. But inspired by Lauren, the Celiac Teen, I decided to try baking without it.

    But here's the thing.

    Shunning gluten is a complicated issue. Gluten imparts a flexibility to batter and dough, and baking without it can lead you to crumbly, gritty ruin if you're not careful. You're giving up protein. And you're giving up elasticity. And not only that, you're saying buh-bye to the toothsome texture you are accustomed to.

    Reaching for xanthan gum was a quick fix, an immediate solution to this lack of flexibility problem. But many of you now report you don't want to use it. For some it's a price issue (xanthan gum ain't cheap, Darling). For others it's a digestive issue (xanthan gum or its alternative, guar gum, can be hard on sensitive digestion). And for some, it's an allergy issue (to mold or the growth medium, most often cornstarch).

    Gluten-free baking without gums is tricky. This, I know. So my first foray into this venture is not vegan. I used two free-range organic eggs. Egg whites help give gluten-free batter that precious stretchability factor. And the protein factor. They bind, and they leaven.

    My choice of flours reflects two things- what I had on hand this morning, and my desire to use whole grains (I am liking starches less and less). I picked hazelnut flour for the delightful nutty flavor and protein; millet, brown rice, and sorghum flour because they are whole grain and higher protein than white rice flour or potato starch; and I used coconut flour because it attracts moisture and adds a lovely texture to gluten-free baked goods (not to mention, for its high fiber status).

    The result? A tasty, blog worthy success. I absolutely love these strawberry muffins.

    Risi E Bisi (Rice and Peas)


    Risi e bisi (pronounced REE-see ay BEE-see) is a classic Venetian dish. It's somewhat like a risotto but a little soupier to where you will be using a spoon. I really enjoyed the simplicity and beauty of this dish in every way. The peas are sweet and pair so nicely with the leeks and other flavors from the broth and light seasonings. This recipe makes a large batch so feel free to cut the recipe in half.

    This lovely recipe is inspired and adapted from NPR Kitchen Window, A Fresh Pod Cast: Savoring Springs Green Peas.


    I decided to use frozen petite peas for this as I honestly didn't feel like shelling 4 lbs. of peas. Please don't judge me. :) I think this is how most of you will be cooking this as frozen peas are convenient. But of course, fresh peas are best and will yield a lovely flavor. Try not to eat them all before they go into the recipe either. I know I can eat these peas by the handfuls. They are so sweet and tender that I can't get enough of them.



    Then we bring in the mild flavors of leeks and bay leaves. I used two medium sized leeks, light green and white parts only, slicing them thinly. I also chopped about 1/3 of the thinly sliced batch so there would be some smaller onion like pieces too (this is optional).


    I used this sprouted brown grain rice from Planet Rice that I picked up from my local grocery store. It was about $4 for a 20 oz bag. Using this rice I found that I needed to add a little extra cooking time to achieve the texture I was looking for. They do have a lightly milled spouted brown rice that will cook a bit faster, then you won't need the extra cooking time at the end like I needed. Traditionally the rice used in this dish is a risotto rice like Arborio rice, Carnaroli or Vialone Nano which are grown in Italy.


    As mentioned in this Food & Wine recipe, it is said by the cooks in Venetia that "for each grain of rice there should be a pea"...I agree!


     Risi E Bisi (Rice and Peas)

    Ingredients (serves 6 - 8)
    • 6 - 8 cups vegetable broth OR water with 3 Repunzel Vegetable Bouillons
    • 2 bay leaves
    • 3 tablespoons nutritional yeast, optional
    • 2 tablespoons olive oil
    • 2 medium leeks, thinly sliced OR one onion, diced
    • 1 garlic clove, minced
    • 2 cups sprouted brown rice, arborio or any medium grain rice of choice
    • 4 cups fresh peas or thawed frozen peas 
    • 1/4 cup flat leaf parsley, chopped and loosly packed
    • mineral salt and pepper, to taste
    • almond parmesan, for topping (not shown)

    In a medium saucepan, place the stock and bring to a gentle simmer. Add in the bay leaves, nutritional yeast and keep broth warm. 

    In a large stock pot or dutch oven, heat oil over medium heat. Add leeks and cook until just softened, about five minutes (remove and set aside a few tablespoons of the leeks for topping if desired). Add garlic and rice, toss until rice is nicely coated, about 3 minutes. 

    Add in warm broth, one cup at a time, the stock should be bubbly. Stir often allowing the broth to be just absorbed. Add in another cup of broth, repeat. Add in peas, more stock and continue the process for another 15 minutes or so, or until the rice is al dente, tender but chewy. The whole process should be about 25 minutes or so. Note: Using the sprouted brown rice, at the end I covered my rice and peas and let simmer for about 10-15 minutes until rice was ready to my liking.

    Add in more broth and stir. Your rice and peas should be a little soupy. Remove from heat, taste for seasoning and stir in parsley. Remove any bay leaves that made it into the rice and peas. Serve topped with a nice dusting of almond parmesan and freshly cracked pepper. 

    Quick method: After sauteing the leeks and rice as above. Add at least 7 cups broth, peas, bay leaves and nutritional yeast, bring to a boil, cover and cook for 20 - 30 minutes until rice is tender. Remove from heat add in parsley. Let set a few minutes and serve as desired.

    And if you were thinking about subbing quinoa for the rice, go ahead, it's delicious too as pictured below (this is actually my preferred grain, I love everything about it...but then this dish isn't called Risi E Bisi). Top with Almond Parmesan like shown and your good to go. Truly wonderful!


    How to make using quinoa...

    In large pot, heat oil and saute leeks, about five minutes. Add 2 cups rinsed quinoa and cook for another 3 minutes, stirring frequently. 

    Add 7 cups broth, bay leaves, nutritional yeast, bring to a boil. Add in peas, do not stir, cover and simmer for about 20 - 25 minutes. Test quinoa for tenderness by tasting. Turn of heat, uncover and let set for about 10 - 15 minutes until broth is mostly absorbed. It will thicken upon standing, add more warm broth as needed for desired soupiness. Remove bay leaves. Toss in parsley, taste for seasoning and serve. 

    This method with the quinoa will leave you with wonderful leftovers. Quinoa holds up well and reheats beautifully the next day.
