Simple Lemon Pasta


 The simples are the best ! Here is a lemon pasta dish that is easy to make in a cinch. It's full of light & bright flavors leaving you feeling refreshed and satisfied. I used rice pasta noodles for the first time and they are great. Not as much protein and fiber as the whole wheat ones I was going to use but they are good option over other choices, especially good for those who are living gluten free. 


Ingredients
1 lemon, juice and zest
olive oil
pasta of choice, I used rice
scallions, garnish
himalayan salt & pepper

Cook pasta according to package. Serve with a drizzle of olive oil and squeeze of lemon, top with lemon zest, scallions and salt & pepper to taste. Simple and delicious...

You may also like to add some sauteed chopped garlic and shallots, or add red pepper flakes or sriracha for  some spice.
