Soba Noodles w/ Sweet & Spicy Ginger Scallion Sauce


I love sweet and spicy dishes, this one really hits the spot. I have now fondly adopted the soba noodle as a favorite and it is now a staple in my pantry. Not only are they delicious, they are full of nutrition. I also learned that they are not related to buckwheat at all, in fact they are considered a 'highly nutritious seed'. If your following a gluten fee lifestyle look for the soba noodles containing 100% buckwheat. 


I really enjoyed making this over and over and adding my own personal touch to the origianl recipe by Simply Reem. Sweet and Spicy...something for both tastes! I hope you get a chance to enjoy for yourself... 

Soba Noodles w/ Sweet & Spicy Ginger Scallion Sauce

Ingredients
  • soba noodles – 1 9oz packet.
  • 2 tablespoons sesame seeds 
  • 1/4 cup cilantro, chopped or whole
  • cucumber, julienned 
  • lime wedges 
  • mineral salt and pepper to taste
For Sweet Ginger Scallion Sauce
  • 1 cup scallions, thinly sliced
  • 2 tbsp ginger, minced
  • 2 - 3 tablespoons sesame oil
  • 2 teaspoons chili oil
  • 1 tablespoon Namo Shoyu, tamari or soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon crushed red pepper flakes, or to taste
  • 1 tablespoon pure maple syrup
Method
  1. Combine ingredients for Sweet & Spicy Ginger Scallion sauce in a small bowl, test for the seasoning. Set aside for 10 -15 minutes to let the flavors develop.
  2. Boil the soba noodles as per the instruction on the package. Drain water and transfer to your bowl.
  3. Add the sauce and sesame seeds then toss the noodles well. Add your cilantro and cucumber, toss again adding salt and pepper as needed.
